James Martin aubergine with halibut and miso recipe on James Martin: Home Comforts

James Martin served up tasty deep-fried aubergine with halibut and miso on James Martin: Home Comforts.

James says: “This Japanese-style dish is a quick and elegant light meal with deliciously delicate flavours.”

The ingredients are: 150ml white miso, 150g caster sugar, vegetable oil, for deep frying, 2 aubergines, cut into 1-2cm cubes, 2 tbsp roughly chopped fresh coriander, 50g butter, 500g halibut fillet, skin and pin bones removed, flesh cut into 8 pieces and 100g edamame beans.

To serve: 1 tbsp white sesame seeds, 1 tbsp black sesame seeds and 2 tbsp micro-cress, ideally a mixture of red amaranth and bronze fennel fronds.
