James Martin orange and rapeseed oil cake recipe on James Martin: Home Comforts

James Martin used store cupboard ingredients to make a delicious orange and rapeseed oil cake with cream cheese frosting on James Martin: Home Comforts.

James says: “Using rapeseed oil instead of butter or margarine is a fantastic way to incorporate moisture into a cake.”

The ingredients are: butter, for greasing, 5 large oranges, 100ml rapeseed oil, 4 free-range eggs, 450g caster sugar, 125g self-raising flour, 125g ground almonds, 2 tsp baking powder, 150g cream cheese, 150g crème fraîche and 25g icing sugar.

To decorate: 25g walnut halves, chopped and 1 tbsp basil cress (optional).
