Jamie Oliver served up tasty Middle Eastern inspired slow cooked spiced shoulder of lamb with homemade flatbreads and cabbage pickle on Jamie and Jimmy’s Friday Night Feast.
The ingredients are: 1 small shoulder of lamb (1.5kg), 1 teaspoon cumin seeds, 2 teaspoons coriander seeds, 1 teaspoon fennel seeds, 1 pinch of saffron, ½ a bunch of fresh thyme, 1 sprig of fresh rosemary, 1 orange, 100 g unsalted butter (at room temperature), 1.5 kg large ripe tomatoes , on the vine, 1 bulb of garlic, olive oil, 200 g plain wholemeal flour , plus extra for dusting, 2 cos lettuce, 1 pomegranate, 2 tablespoons harissa, 1 teaspoon rose water, ½ a bunch of fresh mint, 150 ml Greek yoghurt and 1 tablespoon red wine vinegar.
For the cabbage pickle: ½ a medium red cabbage, ½ a bunch of fresh flat-leaf parsley, 2 tablespoons red wine vinegar and 1 pinch of ground cloves.
