James Martin and Olympic boxer Nicola Adams make delicious churros with peaches and custard on James Martin: Home Comforts.
James says: “This delicious dessert combines caramelised peaches, comforting vanilla custard and naughty but nice churros.”
The ingredients for the custard are: 5 free-range egg yolks, 100g caster sugar, 250ml milk, 250ml double cream and 1 vanilla pod, split in half, seeds scraped out using the tip of a sharp knife.
For the peaches: 75g butter, 25g sugar, 4 ripe peaches, stones removed and roughly chopped and 2 large sprigs fresh basil, leaves only, torn.
For the churros: vegetable oil, for deep frying, 50g caster sugar, plus extra for dusting, 75g butter, 200g plain flour, ¼ tsp baking powder and 1 free-range egg.
