James Martin mini cranberry panettones recipe on Home Comforts at Christmas

James Martin served up delicious mini cranberry panettones with rum butter for the festive season on Home Comforts at Christmas.

The ingredients for the panettones are: 75g butter, softened, plus extra for greasing, 50g candied peel, 100g golden sultanas, 100g dried cranberries, 2 tbsp spiced rum, 425g strong white bread flour, plus extra for dusting, 60g caster sugar, 1 tsp salt, 18g fresh yeast, 160ml tepid water, 3 free-range eggs, 2 left whole and 1 beaten for egg wash and 1 orange, zest only.

For the rum butter: 500ml double cream, 125g soft light brown sugar and 5 tbsp rum.
