Simon Rimmer served up a tasty rabbit burrito with a little help from Tim Lovejoy on Sunday Brunch.
The ingredients are: 2 red onions, sliced, 1 clove crushed garlic, 3 red chillies, chopped, 1 very finely sliced red pepper, 200g cooked long grain rice, 75g cooked black beans, 2 rabbits, jointed and roasted, 50ml hot mexican sauce (Cholulah), Juice 2 limes, 8 x large soft corn tortillas and 150g grated mozzarella.
For the Guacamole: 3 ripe avocados,Olive oil, Juice of 6 limes,2 red chillies, Half a red onion, finely chopped and 3 skinned and chopped tomatoes.
Sour cream and lime wedges to serve.
