Levi Roots jerk chicken with rice and Caribbean slaw recipe on Lorraine

Levi Roots served up a tasty jerk chicken with rice, peas and Caribbean slaw on today’s episode of Lorraine.

The ingredients for the chicken are: 4 tsp all-purpose seasoning, 2 tsp ground ginger, 90ml cider vinegar, 1 Scotch Bonnet, with seeds very finely chopped, 2 tsp nutmeg, finely grated, 2 tbsp olive oil, 16 chicken wings and lime wedges, to serve.

For the ‘slaw: ½ Savoy cabbage, ½ white cabbage, ½ red onion, peeled, ½ small mango, 3 tsp French mustard, 100ml cider vinegar, 8 tbsp soft light brown sugar, 100ml olive oil, Salt and pepper, 1/2 tbsp hot chilli sauce and 2 red chillies, seeded and cut into fine slivers.

For the rice and peas: 1 can coconut milk, 850ml warm water, 1 hot red chilli (ideally Scotch bonnet), whole and undamaged, 7 allspice berries, 2 sprigs of thyme, 1 garlic clove, peeled, 1 spring onion, bruised with a rolling pin, ½ onion, roughly chopped, 400g can 30g black beans, drained, Salt and pepper and 450g basmati rice.
