Simon Rimmer serves up a delicious pumpkin and coconut loaf on Sunday Brunch.
The ingredients are: 600g cubed pumpkin, roasted, tbs oil to roast, 100g butter, 300g soft light brown sugar, 2 eggs, 500g self raising flour, half tsp bicarbonate soda, tsp ground cinnamon, tsp each of ground ginger, cloves, nutmeg, 75g desiccated coconut – soaked in water for 10mins and a little warm water (optional).
