Sally Bee Spinach and sweet potato frittata recipe on Lorraine

Sally Bee served up a delicious healthy spinach and sweet potato frittata dish on today’s episode on Lorraine.

The ingredients are: 2 tbsp olive oil, 1 small onion, peeled and finely chopped, Half a sweet potato, peeled and cut into small chunks, 1 garlic clove, peeled and crushed, Freshly ground black pepper, to taste, 3 handfuls of baby spinach leaves, 8 cherry tomatoes, halved, 4 free-range eggs, lightly beaten, A handful of fresh parsley, chopped and Green salad, to serve.
