Gennaro Contaldo – standing i for Nigel Barden – served up a tasty chicken salad dish on Radio 2 Drivetime.
The ingredients are: 1 x quantity Chicken.
For the marinade: 300 ml evo, 3 x garlic cloves, left whole, 1 x red chilli, sliced, 4 x thyme sprigs, 2 x rosemary branches and 4 x sage leaves.
For the vegetables: 400 ml water, 200 ml red wine vinegar, salt, 100 g green beans, topped and tailed, 2 x celery stalks, sliced, 2 small carrots, sliced, 10 x baby onions, peeled and left whole, 100 g celeriac, peeled and cut into bitesize chunks, ¼ x red pepper, cut into chunks and a few cauliflower florets.
