Phil Vickery served up prawns with noodles, vegetables, yuzu juice and no added salt on This Morning.
Ingredients for the vegetable mix: 4 tbsp any oil, 1 small sweet potato, peeled, chopped 1cm pieces, ½ small butternut squash, peeled and seeds removed, chopped 1cm pieces, 1 red pepper, de seeded, chopped 1cm pieces, 1 yellow pepper, deseeded, chopped 1cm pieces and 200g fine rice noodles (finer the better).
For the rub: 2 tsp dried thyme, 2 tbsp paprika, 1 tbsp ground black pepper, 2 tsp cayenne powder, 1 tbsp dried onion powder, 1 tbsp dried garlic powder, 2 tsp ground cumin, 2 tsp ground fennel, 1 tbsp brown sugar, Vegetable oil for frying and 20 freshwater prawns (defrosted and peeled).
For the dressing: 4 tbsp Yuzu (half a 60ml bottle) or, juice 1 small orange and 1 small lime, 2 tsp sesame oil, 2 tbsp olive oil, 2 tbsp mirin or runny honey, 2 tbsp very finely chopped fresh ginger, ½ small red chilli finely chopped, Pepper, 5 tbsp chopped fresh coriander and lime segments.
