Nigel Slater served up delicious profiteroles with cheat’s custard on Nigel Slater: Eating Together.
The ingredients for the profiteroles are: 100g butter, plus extra for greasing, 150g plain flour and pinch salt and 4 free-range eggs.
For the cheat’s custard: 4 free-range egg yolks, 4 tbsp caster sugar, 1 vanilla pod, seeds only, 2 tbsp Marsala wine and300g mascarpone.
For the topping: 100g plain chocolate, minimum 75 per cent cocoa solids, 100g white chocolate, 60g pistachios, coarsely chopped, 30g crystallised rose petals and 30g crystallised violets.
