Nigel Slater served up beef cheek and butternut broth in sourdough soup on Nigel Slater: Eating Together.

Nigel says: “This hearty, filling soup requires very little washing up – just eat the bowl when you’ve finished!”

The ingredients are: 2 litres boiling water, 50g dried porcini mushrooms, 4 tbsp olive oil, 800g beef cheek, 1 large onion, roughly chopped, 1 butternut squash, peeled, de-seeded, cut into 5cm chunks, 250g orzo pasta, 1 large round sourdough loaf (the largest you can find) and 3 tbsp chopped fresh parsley leaves, to serve.
