Mary Berry salad tapas recipe on Mary Berry’s Absolute Favourites

Mary Berry serves up a tasty salad tapas that included a Sun-blushed tomato and feta salad, Carrot and poppyseed salad and a Roasted red pepper and artichoke salad on Mary Berry’s Absolute Favourites.

The ingredients for the Sun-blushed tomato and feta salad are: 150g sun-blushed tomatoes, quartered, 75g pitted black olives in oil, drained and halved, 2 tbsp olive oil or oil drained from the sun-blushed tomatoes and 150g good-quality feta cheese, crumbled into small chunks.

For the Carrot and poppyseed salad: 6 medium carrots, peeled, grated, 1 small lemon, juice only, 4 tbsp olive oil, 1 tsp caster sugar and 1 tsp poppy seeds.

For the Roasted red pepper and artichoke salad: 300g roasted red peppers in oil, drained and sliced,
175g chargrilled artichoke hearts in oil, drained and chopped, 2 tsp shredded fresh basil leaves, 2 tsp balsamic vinegar and salt and freshly ground black pepper.
