Nigel Slater apple and Stilton dumplings recipe on Nigel Slater: Eating Together

Nigel Slater served up delicious apple and Stilton dumplings with red onion chutney on Nigel Slater: Eating Together.

Ingredients are for the pink onion and golden sultana chutney: 2 red onions, sliced into thin rings, 3 tbsp white wine vinegar, 2 lemons, juice only, 1 tbsp caster sugar, 5 cloves, 1 cinnamon stick and 100g golden sultanas.

For the dumplings: 3 eating apples, such as Cox’s Orange Pippin, peeled, cores removed, roughly chopped, 1 lemon, juice only, 320g ready-made all-butter puff pastry, plain flour, for dusting, 160g Stilton, 1 free-range egg, beaten and 2 tbsp nigella seeds.
