Francesco Mazzei serves up wild boar in liquorice on Saturday Kitchen.

Francesco says: “Fillets of wild boar are marinated in liquorice, bergamont and spices for a dinner with a difference.”

For the sauce: 5g butter, 10ml liquorice liqueur and 50ml chicken stock.
