Anezka Khan cooks aubergine curry know as Brinjal that is a very tasty vegetarian curry dish on Mel and Sue.
The ingredients are:
1/4 cup sunflower or olive oil, 4 cloves garlic, crushed, ½ inch fresh grated ginger, 3 medium onions, thinly sliced, 1/2tsp cumin seeds, 1/2tsp turmeric powder, 1/2tsp chilli powder, 1/2tsp garam masala powder, 1tsp salt, 3 medium tomatoes, chopped, 1tsp tomato purée, A handful fresh coriander, roughly chopped, 2 large aubergine cut into slices, Sunflower or olive oil for frying, 3 cups plain yogurt and 1tsp chaat masala.
