James Tanner Chicken in tomatoes with lemon and herb couscous recipe on Lorraine

James Tanner serves up a healthy chicken in tomatoes with lemon and herb couscous meal on Lorraine.

The ingredients are: 4 x chicken breasts, 1.5 tsp ground cumin, 1.5 tsp ground coriander, 3 cloves of minced garlic, 1 knob of grated ginger, 1⁄2 jalapeño peppers, Zest of 1 lemon, 1 tbsp of tomato paste, 400ml jar of passata pulp or good tomato juice, Handful of fresh basil and Handful of sliced black olives.

For the couscous: 250g easy-cook couscous, Zest and juice of 1 lemon, 475ml hot chicken stock, 1 diced small red onion, 2 tbsp chopped coriander, 3 tbsp extra virgin olive oil and Crushed sea salt and freshly ground black pepper.
