Tom Kerridge cooks turkey roll with Christmas crumble topping for a tasty Christmas lunch on Tom Kerridge Cooks Christmas.

Tom says; “Dry, tasteless turkey be gone! Tom Kerridge shows you how to make a really moist, flavourful turkey roast with all the trimmings.”

The ingredients are for the crumble topping, 100g pork scratchings, 100g sourdough bread, broken into pieces and baked until crisp, 100g shelled pistachios, roughly chopped, 50g dried cranberries, roughly chopped, 2 tbsp fresh thyme leaves and 1 orange, zest only.

For the turkey: 2-2.2kg boneless and skinless turkey breast and 140g brown sauce and bread sauce, to serve.

  1. With the Turkey roll, can I prepare the stuffing on Xmas eve, and stuff, roll and cling film the Turkey Xmas eve ready to cook Xmas morning?
