James Martin makes a delicious mulled wine-spiced roll with cinnamon and brandy icing for the festive season on Christmas Kitchen.
James says: “These spiced, boozy Christmas buns are the perfect mid-morning or mid-afternoon festive treat.”
The ingredients for the mulled spice mixture: 1 cinnamon stick, crushed, ½ tsp whole cloves, ½ tsp ground ginger and ¼ tsp ground nutmeg.
For the mulled spiced roll: 20g dried fast-action yeast, 625g strong white bread flour, plus extra for dusting, 75g caster sugar, pinch sea salt, 500g chilled butter, sliced into 1cm thick rectangles, plus extra for greasing, 2 free-range egg yolks, lightly beaten.
For the filling: 300g full-fat cream cheese, 1 vanilla pod, seeds only and 1 tsp mulled spice mixture (see above).
For the brandy icing: 200g icing sugar, sifted, 100ml maple syrup and 25ml brandy.
