Gino D’Acampo serves up Christmas pudding trifle dessert for the festive season on Let’s Do Christmas.
The ingredients are: 3 tbsp orange liqueur, 50ml orange juice, 1 cinnamon stick, 50g sugar, 150g dried apricots, roughly chopped, 100g dried cranberries, 150g raisins, 2 Madeira loaf cakes, sliced, 4 clementine’s, peeled and cut into rings, 8 figs, quartered, 250g mascarpone, 2 tbsp icing sugar, 500g good quality vanilla custard, 50g pecan halves, 4 tbsp honey, 300ml cream whipped, 2 tbsp brandy or sherry and 3 tbsp icing sugar.
