Monica Galetti’s recipe for blini, crostini and vol-au-vent canapes proved a tough skills test for the eighth group of chefs to enter the MasterChef The Professionals 2014 kitchen.

It is day eleven of MasterChef The Professionals, and the four chefs from the five that started the day and made it pass the Signature Dish Test, will have to impress Monica Galetti and Greg Wallace in the Skills Test to give themselves a chance of making the quarter-finals.

They must sharpen their canapes skills and make a version of Monica’s blini, crostini and vol-au-vent canapes to show that they can thing on their feet and improvise where knowledge is lacking.

The chefs must use their wits, culinary knowledge and common sense to create a dish that impresses in just 15 minutes.
