Phil Vickery serves up chestnut bacon and parsnip soup for a hearty homemade soup with posh cheese on toast on This Morning.
The ingredients for the soup are: 200g fat bacon cut into 1cm pieces, 1 level tsp ground turmeric, 2 medium parsnips, peeled and chopped the same size as the bacon, 2 medium onions, peeled and chopped, 4 cloves of garlic, peeled and chopped, 2 sticks of celery, chopped, 1 large potato peeled and chopped into 1cm cubes roughly, 12-15 cooked chestnuts, vac pac, 1 x 10g vegetable stock cube, Salt and Black pepper.
For the spiced Oil: 6 tbsp extra virgin olive oil, roughly, 1 tbsp very finely chopped fresh ginger, 1 tsp madras curry powder, ½ tsp cumin seeds and ½ tsp ground allspice.
For the cheese and toast: 4 slices multi seed bread, 8 spicy pepperdew peppers, finely chopped, 2 level tsp English mustard powder, 2 tbsp fresh chopped basil and 300g coarsely grated mature Cheddar cheese.
