Corn on the cob with burnt onion ketchup recipe on Tom Kerridge’s Best Ever Dishes

Tom Kerridge serves up corn on the cob with burnt-onion ketchup on Tom Kerridge’s Best Ever Dishes.

Tom says: “Making your own ketchup is not as difficult or time-consuming as it sounds – and it makes any barbecue go with a bang.”

The ingredients for the burnt-onion ketchup are: 2-3 tbsp vegetable oil, 3 onions, peeled and sliced, 2 bay leaves, 150ml white wine vinegar, 1 tbsp Worcestershire sauce, 3 garlic cloves, grated, 50g dark muscovado sugar and 1 tbsp chopped salted anchovies.

For the corn on the cob: 100g butter, softened, 1 tsp smoked paprika, 1 tsp dried sage, 1 tsp dried chilli flakes, 1 tsp cracked black peppercorns, 1 tsp table salt, 1 tsp garlic powder and 4 heads sweetcorn, husk and silk removed.
