Jack Monroe cooks tasty mac n cheese with cauliflower and bacon that works out a just 57p per portion on This Morning.
Jack Monroe is a single mother whose delicious recipes, published online were so nutritious and thrifty that they were handed out by food banks as examples of how to manage on next to nothing.
The ingredients are: 300g short pasta like macaroni, 2 tablespoons oil, 200g cauliflower, fresh or frozen grated or broken into small florets, 200g streaky bacon chopped, 2 eggs, 200ml milk, black pepper and 100g hard strong cheese.
To prepare the dish, bring a medium saucepan of water to the boil. Add the pasta and reduce to a simmer.
Meanwhile gently heat the oil in a large saucepan, then add the grated cauliflower and bacon
In a separate bowl beat together the eggs, milk and pepper. Add a few tablespoons of the pasta cooking water and beat in.
When the pasta is al dente, drain it and add to the pan with the cauliflower and bacon. Pour in the egg mixture and mix through.
Transfer to an ovenproof dish, top with grated cheese and grill for a few minutes until the cheese is golden and crispy.
