Tom Kerridge makes beef and blue cheese puff pastry pizza on Tom Kerridge’s Best Ever Dishes.

Tom says: “Ready-made puff pastry is a great ‘cheat’ for pizza. Topped with rich beef, a creamy cheese sauce and tangy onions, this version is hard to beat.”

The Ingredients are for the base: 500g all-butter puff pastry, plain white flour, for dusting, 1 free-range egg yolk, 1 tbsp double cream, for the glaze, 2 tsp beef extract and 3 tbsp onion marmalade.

For the sour onions: 100ml cider, 100ml cider vinegar, 50g demerara sugar and 3 small red onions, peeled and cut into six wedges with the root intact.

For the crème fraîche dressing: 75g full-fat crème fraîche, 75g soft blue cheese, such as Dolcelatte,1 tbsp chopped chives and salt and freshly ground black pepper.

For the beef: 200g bavette steak, thinly sliced, 50g cornflour, 4 tbsp vegetable oil, for cooking, cayenne pepper, to taste, salt, to taste and watercress, to garnish.
