Jamie Oliver serves up a very tasty looking jerk ham, egg and chips on Jamie’s Comfort Food.
Jamie says: “Ham, egg and chips is an absolute classic in the UK, but as lovely as it is, I think the rest of the world has moved on. So, this jerk ham is off-the-chart delicious, and with homemade chunky chips turns this great old staple into a luxurious treat that will blow people away.”
The ingredients are: 3.5 kg higher-welfare leg of ham, bone in, 1 x Perfect chips recipe, 4 large free-range eggs, 1 ripe pineapple and olive oil.
For the jerk: 6 cloves of garlic, 2 red onions, 5 fresh Scotch bonnet chillies, 1 tablespoon golden caster sugar, 12 sprigs fresh thyme, 6 fresh bay leaves, 2 level tablesspoons ground allspice, 2 level tablesspoons ground nutmeg, 2 level tablesspoons ground cloves, 125 ml golden rum and 125 ml malt vinegar.
For the glaze: 3 tablespoons marmalade and golden rum.
Jamie serves his dish with caramelised pineapple.
