Tom Kerridge Barnsley Chop recipe on Woman’s Hour

Tom Kerridge cooks the perfect Barnsley Chop on Woman’s Hour. A Barnsley Chop is a lamb chop taken from right across the loin which becomes a double sided chop. It is sometimes referred to as a saddle chop as it is cut across the saddle producing a double loin chop with a little under fillet all in one.

The ingredients are: 2 tablespoons cumin seeds, 2 tablespoons coriander seeds, 2 thick Barnsley chops, Vegetable oil, for cooking, Generous knob of butter, Juice of ½ lemon, Finely grated zest of 1 small orange, to garnish and Salt and freshly ground black pepper.

To serve: Couscous, potatoes or rice and some simple steamed greens.
