James Martin onion bhajis with courgettes, fresh lime and two dipping sauce recipe on James Martin’s Saturday Morning

James Martin served up tasty onion bhajis with courgettes, salad, fresh lime and two dipping sauce (mango dip and rita) on James Martin’s Saturday Morning.

The ingredients are: 1 large onion, sliced, 1 courgette, grated, 1 lemon, zest and juice, Salt and pepper, 1 tsp turmeric, 2 tsp curry powder, ½ tsp ground cumin, 200g gram flour, 1 /2 small bunch fresh coriander, chopped, 1 green chilli, diced and 200ml water.

For the mango dip: 1 jar mango chutney, 1 green chilli, ½ a bunch of coriander and 2 limes, juice only.

For the raita: 200ml vegan yoghurt and 2 tbsp mint sauce.

For the salad: 1 large tomato, diced, ½ red onion, diced and ½ cucumber, diced.

Vegetable oil for frying.
