Simon Rimmer butter chicken with rice and naan bread recipe on Sunday Brunch

Simon Rimmer served up a tasty butter chicken with rice with naan bread on Sunday Brunch.

The ingredients are: 750g of chicken thighs, skinless and boneless, cut in half, 125g of Greek yoghurt, 2 cloves of crushed garlic, 25mm piece of ginger, grated, 1 teaspoon of salt, Juice of 1 lemon, 1 tablespoon of chilli powder, 1 teaspoon of cumin and 1 teaspoon of garam masala.

For the sauce : 1kg tomatoes (over ripe are best), 150ml of water, 5cm piece of ginger, chopped, 4 cloves of garlic, 4 cardamom pods, 1 teaspoon of chilli powder, 80g of diced, cold butter, 1 teaspoon of garam masala, 75ml of cream, 1 tablespoon of sugar and 1 tablespoon of crushed fenugreek leaves.

Serve with basmati rice and buttered naan.
