Simon Rimmer served up a delicious coffee bread and butter pudding with brioche and a coffee and cream sauce on Sunday Brunch.
The ingredients are: 1 large brioche loaf, 200g of butter, Plenty of demerara sugar, 150g of toasted pecans, 100g of milk chocolate pistoles, 3 whole eggs, 3 egg yolks, 400ml of double cream, 100ml of strong coffee, 100g of caster sugar and 1 dash of vanilla.
For the sauce: 100ml of double cream, 100g of butter, 100g of soft dark brown sugar and 100ml strong coffee.
Extra cream to serve.
