Simon Rimmer served up a delicious limoncello polenta cake with berries on Sunday Brunch.
The ingredients are: 200g of polenta, 200g of self-raising flour, 1 teaspoon of baking powder, 225g of sugar, Juice and zest of 1 lemon, 3 tablespoons of limoncello, 1 teaspoon of poppy seeds, 250g of ricotta, 100g of melted butter, 4 eggs and 200ml warm water.
To serve : 200g of raspberries, 200g of strawberries, 50ml of ginger wine, 75g of icing sugar and Zest of 1 lemon.
