Simon Rimmer served up a tasty pork belly with cola BBQ sauce with sticky rice on Sunday Brunch.
The ingredients are: 500g of pork belly slices, 2 teaspoons of fennel seeds, 1 clove of garlic, sliced and Peel of lime.
For the sauce : 500ml of cola (full fat), 200ml ketchup, 100ml of Worcestershire sauce, 125ml light soy sauce, 250ml chicken stock, 300g dark brown sugar, 200g maple syrup, 2 cloves of garlic, 125ml of sherry vinegar, 1 tablespoon of Dijon, 1 tablespoon of tomato puree, 2 teaspoons of chilli flakes, 300g of cooked long grain rice, 30g of butter, 1 tablespoon of peas, 1 tablespoon of edamame, 1 tablespoon of tinned corn, 1 tablespoon of chopped chives and 1 tablespoon of spring onions, chopped.
