Simon Rimmer coffee and banana parfait with mango and coconut sauce recipe on Sunday Brunch

Simon Rimmer served up a delicious coffee and banana parfait with mango and coconut sauce on Sunday Brunch.

The ingredients are: 400g tin of condensed milk, 2 teaspoons of vanilla extract, Half a teaspoon of sea salt (fine), 475ml of cream – whipped, 4 mashed bananas and 150ml of strong coffee.

For the sauce : Tin of mango puree, Tin of coconut milk, 100ml of cream and 1 teaspoon of vanilla.

Garnish with coffee beans and chopped mango.
