Gino D’Acampo makes cookie dough Mississippi mud pie on Let’s Do Lunch with Melanie Sykes.

The ingredients are: 3 x 154g packets Oreo cookies, crushed, 75g salted butter, melted.

For the cake layer: 30g salted butter, 85g good-quality dark chocolate ( 70%), 30ml strong coffee, cooled, 1 tbsp pure vanilla extract, 3 large eggs, separated, at room temperature and 110g caster sugar.

For the cookie dough: 70g plain flour, 1 tbsp coco powder, A pinch of salt, 30g caster sugar, 30 g granulated sugar, 30g butter, 1 tsp vanilla extract, A handful of chocolate chips and 1 tbsp milk.

For the topping: 300ml double cream, 2 tbsp icing sugar and A chocolate flake.
