Simon Rimmer burnt sweet potato with nduja recipe on Sunday Brunch

Simon Rimmer served up tasty burnt sweet potato with nduja on Sunday Brunch.

The ingredients are: 3 sweet potatoes, cut into long wedges, Oil, salt & pepper, 75g of butter, 75g of nduja, Zest of 1 lemon and 250g of buffalo mozzarella, torn.

Garnish with chopped blushed tomatoes.
