Simon Rimmer served up tasty BBQ steak tacos with a tomato and avocado salsa on Sunday Brunch.
The ingredients are: 12 x 15cm soft corn tacos, 2 x 200g rump steaks, 2 tablespoons of soft dark brown sugar, 2 teaspoons of salt and Oil to fry.
For the sauce : 150g of American mustard (Frenchie’s or similar), 50g of ketchup, 75g of honey, 25g of Worcestershire sauce, 75ml of cider vinegar, 1 teaspoon of garlic powder, 1 teaspoon of cayenne pepper, 1 teaspoon smoked paprika, 1 teaspoon of salt and 75g of soft light brown sugar.
For the salsa : 2 ripe avocados, crushed, 4 plum tomatoes, finely chopped, Half a finely chopped cucumber, 1 finely chopped red onion, A handful of chopped coriander, Juice and zest of 2 limes and 1 finely chopped birds eye chilli.
