Simon Rimmer served up a tasty flatbread with marinated tomatoes and mozzarella on Sunday Brunch.
The ingredients for tomato mix are: 1 very thinly sliced red onion, 2 cloves thinly sliced garlic, 12 roma tomatoes, roughly chopped, 12 blush tomatoes, 2 tablespoons soft light brown sugar, 1 tablespoon balsamic vinegar and 250g buffalo mozzarella
For the flatbread: 2 teaspoons nigella seeds, 150ml water, 250g yoghurt, 10g dried yeast, 1 teaspoon smoked salt, 50ml oil + extra oil for frying and 550g strong plain flour.
