Simon Rimmer served up a delicious no bake cheesecake with orange liqueur and berries on Sunday Brunch.
The ingredients are: 200g of crushed digestives, 110g of melted butter, 300g of cream cheese, 300ml of whipped cream, 2 teaspoons of pure vanilla, 200g of Greek yoghurt, 185g of sugar and Zest of 1 lemon.
For the topping : 250g of assorted raspberries, strawberries and blueberries, 100ml of orange liqueur, 75g of icing sugar and 1 teaspoon of vanilla.
