Simon Rimmer served up tasty tomato and feta fritters on Sunday Brunch.
The ingredients are: 1kg of cherry tomatoes, blanched and skinned, 100g of feta, 1 finely diced red onion, 1 tablespoon of chopped mint, 1 tablespoon of chopped oregano, 75g of flour, 1 teaspoon of baking powder, Zest of 1 lemon and 1 teaspoon of sea salt.
The dipping sauce: 200g of Greek yoghurt, Juice of 1 lemon, 1 tablespoon of dried oregano and 1 tablespoon of tahini.
