Rav Gill piggy sausage roll wreath with onion chutney recipe on Junior Bake Off

Rav Gill showcased a tasty piggy sausage roll wreath with nduja and onion chutney on Junior Bake Off.

The ingredients for the ‘nduja butter block are: 195g unsalted butter, soft, 30g ’nduja, ½ tbsp plain flour and Zest of ½ a lemon.

For the dough: 250g strong white flour, plus extra for dusting, ½ tsp fine salt, 50g cold unsalted butter, cubed, ½ tbsp lemon juice and 120ml ice cold water.

For the chutney: 3 red onions, 1 tbsp olive oil, ¼ tsp chilli flakes, Pinch of sea salt, 90g light brown sugar, 75ml apple cider vinegar and 75ml balsamic vinegar.

For the sausage filling: 1 royal gala apple, 400g pork mince, 10% fat, 40g fresh breadcrumbs, 75g cooked onions (from chutney), 1 tbsp chopped fresh sage, Pinch grated nutmeg, Salt and pepper to season.

For decoration: 1 egg, beaten and 18 whole black peppercorns.
