Rav Gill avo lime pie with a biscuit and chocolate shell and avocado lime mousse recipe on Junior Bake Off

Rav Gill showcased delicious avo lime pies with a biscuit and chocolate shell and avocado lime mousse for a technical challenge on Junior Bake Off.

The ingredients for the biscuit and chocolate shell are: 50g plant-based butter, 50g golden syrup, 20 light brown sugar, 100g self-raising flour, 1 tsp ground ginger and 200g dark chocolate, 55 – 70% cocoa solids, melted.

For the filling: 2 ripe avocados, skins removed, de-stoned, 150g coconut oil, 2 tbsp cornflour, Zest of 4 key limes, or 1 regular lime, Juice of 4 key limes, or 1 regular lime, 180g maple syrup, 2 tsp vanilla extract and Pinch sea salt.
