James Golding squash salad recipe on Sunday Brunch

James Golding served up a tasty squash salad using a recipe by Simon Rimmer on Sunday Brunch.

The ingredients are: 1 butternut squash, unpeeled, 2 tablespoons of pomegranate seeds, 1 cinnamon stick, 50ml of oil, 50ml of maple syrup, Big handful of rocket, 50g pecans, Half a red onion (very thinly sliced), 50g of edamame beans and 2 chopped medjool dates.

For the dressing : 75ml of extra virgin olive oil, 25ml of apple cider vinegar, Zest and juice of half a lemon, A teaspoon of ground cumin, Half a teaspoon of cayenne pepper, 1 medjool date, Salt and pepper.

To garnish : Half a cucumber, finely diced and 1 avocado, finely diced.
