Simon Rimmer served up a delicious chocolate olive oil mousse on Sunday Brunch.
The ingredients are: 175g milk chocolate, melted, 100ml extra virgin olive oil, Half a teaspoon of smoked or chilli salt, 50g sugar, 4 eggs, separated and 30ml masala wine.
For the topping: 200g mascarpone, 100ml cream and 1 teaspoon of vanilla.
Extra chocolate and salt to garnish.
