Simon Rimmer served up tasty Beefy Meatballs and Mashed potatoes and gravy on Sunday Brunch.
The ingredients are: 450g minced beef, 2 eggs, 200g dry breadcrumbs (not panko), 75g grated Parmesan, 1 tablespoon smoked paprika, 125ml milk and 1 clove of crushed garlic.
For the Mash: 900g dry mashed potatoes, 250g butter – cubed and 50g finely grated Parmesan.
For the gravy: 4 sliced onions, 30g butter, 1 tablespoon of rapeseed oil, A few sprigs of thyme, 1 tablespoon of maple syrup, 1 tablespoon of flour, 200ml red wine, 1 tablespoon of balsamic vinegar, 500ml strong beef stock and 1 beef stock pot.
