Simon Rimmer served up delicious parkin with mascarpone cream and fresh fruit on Sunday Brunch.
The ingredients are: 125g of butter, 225g of flour, 1 teaspoon of bicarbonate of soda, 1 tablespoon of freshly grated ginger, 2 teaspoon of cinnamon, 100g of fine oatmeal, 100g of black treacle, 40g of golden syrup, 150ml of milk and 2 eggs.
For the mascarpone cream: 200g mascarpone cheese, 1 tablespoon of icing sugar, 30ml of cream, 100g of finely diced fudge and 1 vanilla pod.
