Simon Rimmer tofu salad with avocado puree recipe on Sunday Brunch

Simon Rimmer served up a tasty tofu salad with avocado puree on Sunday Brunch.

The ingredients are: Block firm tofu, dried as much as poss, 100ml maple syrup, 100ml soy, 25mm piece ginger, grated, 1 Clove garlic, grated and 1 Tbs tamarind sauce.

For the salad: Half red cabbage, shredded, 1 carrot, shredded, Red onion, finely sliced, 50g edamame beans, 1 finely sliced red chilli, 1 Tbs sunflower seeds and 1 Tbs chopped mint.

For the puree: 1 avocado, 1 Tbs tahini, Juice n zest 1 lime and A drop of water, if needed.

Garnish with sesame seeds.
