Simon Rimmer served up tasty smoky beef with chimichurri and new potatoes on Sunday Brunch.
The ingredients are: 2kg beef brisket, 3 finely sliced onions, 1 Tbs smoked chilli paste, 1 Tbs smoked paprika, 100ml red wine vinegar, 150ml dark beer, 6 cloves sliced garlic and 1 kg of new potatoes.
For the chimichurri : 125ml red wine vinegar, 1 Tsp sugar, 3 garlic cloves, 1finely diced shallot, 1 red chilli, chopped, Bunch chopped coriander (including stem), Half bunch chopped parsley, 1 tbs chopped oregano, 1 tbs chopped mint and 200ml extra virgin olive oil.
