Simon Rimmer Raspberry Meringue Pudding recipe on Sunday Brunch

Simon Rimmer served up a delicious raspberry meringue pudding on Sunday Brunch.

The ingredients are: 300ml whole milk, 300ml evaporated milk, 1 teaspoon vanilla, 110g fresh white breadcrumbs, Zest and juice 1 lime, 4 eggs, separated, 100g sugar, 300g fresh raspberries, 1 tablespoon rose water and 75g raspberry jam.
