Simon Rimmer served up a tasty Roast Chicken with Lime and Coriander Sauce on Sunday Brunch.
The ingredients are: 8 chicken thighs, boneless but with skin.
For the marinade: 3 cloves grated garlic, 50ml rapeseed oil, 25ml white wine vinegar, 1 tablespoon smoked paprika, 1 tablespoon smoked chilli paste, 1 teaspoon cumin and 1 teaspoon salt.
For the sauce: Bunch coriander, 2 cloves garlic, Zest and juice 2 limes, 12 slices of pickled jalapeno, 1 tablespoon maple syrup, 1 teaspoon salt and 75ml rapeseed oil.
Serve with cooked orzo mixed with peas and chopped blush tomatoes.
